Summer Dessert Fun with Kids

It is so hot....sometimes I can't bring myself to even think about food!  However, this week I had some fun with my daughter and all my nieces and nephews with some fun summer cupcakes and a cake.
The cupcakes were a blast to make and even the 15 year old nephew had fun decorating the Teddy Grahams.
I'm going to start with my final pictures this week....because they are so cute....and hope you have fun making some of your own.
Swimming Teddy Graham Cupcakes 
The things you will need to make these fun summer desserts are......
Any kind of cake mix for the cupcakes (We used strawberry and lemon)
Teddy Grahams (Don't get the bag in the picture...they were mini...had to go back and get full size)
Frosting (make your own....or cheat like I did and add blue food coloring to it)
Decorating gel tubes....for the eyes and swimsuits
Gumballs (beach balls)
Gummi Peach rings (for the teddy floats)
Don't fill the cupcakes very full.....the easiest cupcakes to decorate were the small ones that didn't have huge domes.
While they cool....start decorating your Teddy Grahams....we made some with sunglasses, some with bikinis and one of my nephews made a Borat swimsuit :-)
This really was easy and tons of fun.  I took them to a pool party and the kids went nuts for them.


The other fun dessert we made this week was Pink Lemonade Cake......I had bought the cake mix and then found a recipe for Lemonade Icing.  The kids loved this cake...it was gone in one day!
1 Pillsbury Pink Lemonade Cake Mix
1 cup water
1/3 cup oil
3 eggs
Mix above ingredients and pour into a greased 13 by 9 pan
Bake at 350 for 25 minutes or until done in the center.
While the cake cools make the frosting
2 cups whipping cream
2 tablespoons white sugar
1/3 cup frozen pink lemonade concentrate, thawed

Beat all ingredients with hand mixer until light and fluffy. Spread on cooled cake. 
You can also use other frozen drink concentrates such as limeade, grape, orange, etc. 

Add a drop of matching food coloring for more color.
Put the cake in the refrigerator for a couple of hours.
Enjoy a fun cool summertime piece of cake!
